the halo 3 website says may 16th 5 am PDT....

Microsoft makes Halo3.com, not Bungie. Bungie says midnight.

bungie websites has it at 5 am as well. it is currently 2 pm pdt ( atucally it is 1:43 but I'm rounding) and the countdown says 15 hours left....do the math and thats 5 am pst
